Canning, canning, and more canning. I cheated and bought 8lbs of carrots because ours just didn't come up again this year, but everything else is from our garden. I canned peas and beans too. I collected them first by freezer, then brought to room temperature and pressured canned them as usual. They all looked pretty good.
This morning I went out and picked corn. Tom and Jess helped take it off the cob.
I started out by using the tool for taking off the kernals, but the ears were to thin and we were wasting a lot. Then I searched through my kitchen gadgets and found these.
Perfect! I was afraid that the coons might get to it before me. We were out of propane, so I thought I would try the corn by way of freezer too. I picked 4 dozen ears and it made up almost 8-quart bags. I hope it will be o.k. We picked a few ears tonight and had them for dinner. Very good! Tom and I spied one really red tomato I will have for lunch soon, and many still on the vine but very green. A few green peppers to be picked too. I was talking to Tom's cousin Lisa earlier today and she said if I put a green pepper in a paper bag with a banana it would turn red. This would be good since I don't have colored peppers growing this year. I don't mind the taste, the color is what looks good in stir fry.
